Macallan The Harmony Collection Rich Cacao is the first release in The Macallan’s Harmony Collection, a limited annual series that launched in 2021 designed to celebrate the distillery’s deep expertise in oak maturation, creativity with flavour exploration and a commitment to more sustainable packaging. This unique single malt was created in collaboration with famed pastry chef Jordi Roca of the three-Michelin-starred El Celler de Can Roca and his Casa Cacao team in Girona, Spain, where Macallan’s Whisky Maker Polly Logan immersed herself in the world of chocolate to identify casks whose natural maturation profile harmonised with rich, indulgent cacao-like notes. The whisky is matured in a carefully selected combination of traditional European and American oak sherry-seasoned casks, bringing together Macallan’s signature sherried depth with sweeter oak influences, and is bottled at 44 % ABV. Rich Cacao lives up to its name with a flavour profile built around deep dark chocolate-fondant aromas on the nose, followed by palate notes of dark chocolate, honey, sticky dates, vanilla and gentle spice, making it an ideal companion to fine chocolate and an intriguing expression for collectors and enthusiasts alike.
